Crema o salsa de rocoto,también conocida como uchucuta
Las carneadas son ideales para compartir de un rato agradable en familia y demás seres queridos, y qué mejor para acompañar estos platillos y disfrutarlos de una manera diferente que una deliciosa Salsa o Crema de Rocoto.
El chile rocoto es uno de los chiles más utilizados en la cocina peruana y boliviana. Los rocotos son muy picantes, alcanzando el nivel de picante del habanero en la escala de unidades de calor Scoville. Si no ha probado nunca el rocoto, tenga en cuenta que es realmente fuerte. Proceda con precaución y comience con la cantidad baja de pasta indicada en la receta, probando antes de añadir más.
Una vez que encuentres el nivel adecuado de picante para ti, esta sabrosa y cremosa salsa es estupenda como salsa de mesa para acompañar patatas asadas o fritas. Deliciosa con el pollo o el pescado a la parrilla, la salsa también es una magnífica pasta para untar en sándwiches y envoltorios. Utilícela en ensaladas de pollo, atún o huevo, ya que la base de mayonesa le da la cremosidad necesaria para ligar todos los ingredientes. Esta salsa de rocoto se mantiene bien en el frigorífico hasta dos semanas y es fantástica en casi cualquier cosa que quiera tener un toque de picante. Los guisos para el desayuno, los kebabs, los falafels, los palitos de mozzarella o sencillamente las patatas fritas reciben un sabroso empujón gracias a los rocotos picantes.
Los rocotos son uno de los pimientos más utilizados en las recetas peruanas y bolivianas, junto con el ají amarillo, el ají limo -muy utilizado en el ceviche- y el ají panca. De forma redonda y muy carnosa como un pequeño tomate, los rocotos tienen semillas oscuras y son tan bonitos como deliciosos.
A veces se confunden con los ajíes manzanos por su forma redonda, así que hay que tener en cuenta que los rocotos pueden ser hasta diez veces más picantes que los manzanos. Manéjelos con cuidado, use guantes y no se rasque la nariz o los ojos al manipular estos pimientos o se llevará una sorpresa lacrimógena. Pero no tema, nuestra receta pide la pasta de rocoto, ya procesada y lista para su uso. La pasta se puede adquirir fácilmente en Internet o en las bodegas latinas e hispanas, y es muy fácil de usar.
Debes saber que el rocoto es un pimiento rojo de gran picor, así que, si eres un amante a las comidas picantes, esta crema será ideal para ti.
Crema de rocoto para carneadas
Ingredientes
- -8 rocotos
- -3 cebollas
- -3 chiles verdes
- -3 dientes de ajo
- -1 lata de leche evaporada
- -1 huevo
- -Cilantro fresco
- -Vinagre
- -Aceite de oliva
- -Media taza de leche
- -Sal y especias al gusto
Elaboración paso a paso
- -Damos inicio a la preparación de esta suculenta salsa, lavando los rocotos y picándolos a la mitad.
- -Vertemos un poco de agua en una olla y sumergimos los rocotos.
- -Llevamos esto a la cocina a fuego medio y dejamos que hiervan durante unos 5 minutos.
- -Mientras tanto se cocina el rocoto, picaremos las cebollas y los chiles verdes, para luego de 5 minutos de cocción, adicionarlos a la olla.
- -Asimismo, vertemos una cucharada de vinagre, dejamos cocinar.
- -Ahora, pelamos y machacamos los ajos muy bien y apartamos.
- -Es momento de hacer uso de una licuadora, por lo que comenzamos vertiendo la leche y la leche evaporada y procesar.
- -Quebramos el huevo y lo adicionamos a la licuadora.
- -En este punto, retiramos la olla de la cocina y agregamos su contenido a la licuadora.
- -Vertemos un poco de aceite de oliva, los ajos machacados y dejamos procesar durante unos minutos.
- -Al notar que la preparación se ha convertido en una mezcla uniforme, sin grumos, lo vertemos en un recipiente.
- -Espolvoreamos sal y especias al gusto, además de unas hojitas de cilantro, removemos y degustamos.
